Feeding the Funky Bunch: Beef Rendang


The other night I cooked up the Beef Rendang from the EDC for the first time and it was a winner!

This curry is probably not what I would call Rendang. My mother-in-law makes a delicious Beef or Kangaroo Rendang (affectionately referred to by the family as Roo-dang!). It is a very dry curry, so tasty and one of my favourites. The Rendang from the EDC is much saucier, a mild curry that is delicious and coconutty, with a nice sweetness. The beef is well marinated in the sauce as it cooks and develops a really wonderful flavour.

If you’re making this one, take a minute to look at the recipe first. Making the curry paste, cooking it and then adding the other ingredients is quick and easy. Takes maybe 10 minutes tops. But then the meat has to cook in the sauce for 40-60 minutes which is longer than usual for most thermomix recipes. You don’t have to do anything during that time, just let the thermomix work away, but a bit of forward planning is required to get dinner on the table on time.

I served this with jasmine rice and steamed veggies. When serving to the kids I usually mash up half the veg and mix through the sauce, leaving the remainder visible. This allows me the peace of mind that veggies are being eaten even if the kids decide to pick them out. This dish was so good it was demolished, veggies and all, by my little ones. Aged 4, 3 and 1, they love a good curry. My husband and I enjoyed it too. He reported it tasted even better the next day as leftovers for lunch.
